Jimmy Dean Biscuits & Gravy

INGREDIENTS
1 pkg Jimmy Dean Sausage (don't substitute another brand)
Oil, preferably canola
1-2 cups milk
Up to 1/4 cup flour
Water
Salt & Pepper (to taste)

DIRECTIONS
There is no exact measurements to this, it is basically guesswork and will probably be a constantly evolving recipe. So, with that in mind, I will give you the directions the same way they were given to me.

1. Cook the sausage in a skillet. Once cooked, remove all but 1 Tablespoon of the sausage and set aside.
2. Add a little bit of oil, approximately 2 T, get it hot.
3. Have milk, a measuring cup of water and salt and pepper at the ready.
4. Start with 2 T flour, stir into oil and sausage. Add more until you get a paste.
5. Add 1 cup water and mix until smooth, over medium-high heat.
6. When it thickens, add milk or water until you get the desired quantity. *Note* When I made this, I realized I wanted more sauce, so I wound up adding more flour after this step. It was fine, but it's best to get all the flour incorporated during step #4. If you add more flour, add more oil as well. Also, I prefer to use more milk than water, but that's just a personal preference.
7. Add the sausage and cook it a bit to re-warm it.

Serve over biscuits, either homemade, Bisquick or Pillsbury. Doesn't matter which kind, but buttermilk will be best.

German Pancakes

INGREDIENTS
1 cup flour
6 eggs
1 cup milk
Pinch of salt
2 T butter

Maple syrup
Fresh strawberries, sliced

DIRECTIONS
Preheat oven to 375F.

Blend flour and eggs with an electric mixer or hand mixer until it is smooth and there are no lumps. Gradually pour in milk while mixer is still on. Mix until fully incorporated.

Place butter in the bottom of an 9x13-inch baking dish and place in oven to melt butter. Remove when butter is melted.

Pour batter into baking dish. Sprinkle with salt. Bake for 15-20 minutes. It is done when it is firm to the touch and golden brown.

Cut into squares and serve warm with maple syrup and sliced strawberries.

Swedish Pancakes

INGREDIENTS
2 eggs, beaten until frothy
1 c milk
3 T butter, melted
1 t baking powder
1/2 t salt
3/4 cup flour

DIRECTIONS
Combine all ingredients and beat with a wire wisk until smooth.

Pour small amounts onto a heated griddle (about 350 degrees) and spread to make a thin layer of batter. When edges are brown and curl up, flip to brown other side.

Serve with your choice of fillings (peanut butter, raspberries, strawberries, bananas, etc) and drizzle with maple syrup.

Banana Bread

INGREDIENTS
3 very ripe bananas
1 C sugar
1 t baking soda
1 t hot water
2 eggs, beaten
1/2 c crisco
2 c flour
1 t baking powder
1 t salt
1/2 c nuts (optional)

DIRECTIONS
Mash bananas and sugar. Let stand 15 minutes. Dissolve baking soda into hot water, add to banana mix.

Cream crisco and eggs in large bowl.

Mix flour, baking powder and salt in separate bowl. Add to crisco mix alternating with banana mix.

Bake at 325 for 1 hour.

Florida Strawberry Bread

INGREDIENTS
3 cups all-purpose flour
1 teaspoon salt
1 tablespoon ground cinnamon
1 teaspoon baking powder
1 cup white sugar
4 eggs
1 1/4 cups vegetable oil
1 1/2 cups fresh strawberries, sliced
1 1/2 cups chopped walnuts

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.

In a large bowl, combine flour, salt, cinnamon, baking powder and white sugar. In a separate bowl, beat together eggs and oil. Stir egg mixture into dry ingredients until just moistened. Fold in strawberries and walnuts. Spoon batter into prepared loaf pans.

Bake in preheated oven for 1 hour, or until a toothpick inserted into the center of the loaf comes out clean. Let cool 10 minutes in pans and then move to a wire rack to cool completely.
